Instructions
  1. Preheat oven to 400 degrees F.
  2. Grease or spray mini muffin tin(s) – 1 large or 2 small.
  3. Put all ingredients into blender & blend until smooth, scraping down sides as necessary.
  4. Pour batter into muffin pans so each cup is nearly full.
  5. Bake 15-20 minutes or until puffed and lightly golden brown.
  6. Let cool in pans for a few minutes, then remove and serve.
  7. Enjoy!
